Baked Pears in Cinnamon Cream

Serve this elegant dessert with Italian Amaretti cookies for an added crunch.

3 Bosc pears, cut in half
1 1/2 Tbsp. butter
2 1/2 tsp. sugar
2 pts. whipping cream
1/2 tsp. ground cinnamon
1/2 c. honey
1 tsp. lemon zest
1/4 tsp. freshly grated nutmeg


Preheat oven to 350°F/180°C.
Butter the interior of a 10-in. omelette pan and then coat with sugar. Place the pears in the pan, stem end pointing toward the center of the pan and the cut side down. Bake at 350°F for 20 minutes.
While the pears are baking, combine cream, honey, cinnamon, lemon zest and nutmeg in a bowl. After 20 minutes, remove the pears from the oven and pour the cream mixture over them. Bake until fork tender. (Depending on the ripeness of the pears, baking could take up to 40 minutes.)
