Apple Crisp with Cranberries

Pair fall's best apples with the tangy flavor of cranberries, then serve warm from the oven with ice cream on top.

Ingredients

For the filling:
10 c. mixture of Granny Smith and Macintosh apples, sliced into 1/2-in. pieces
1 c. fresh or dried cranberries, coarsely chopped
1/2 c. sugar
1/4 c. flour
zest and juice of 1 orange
2 tsp. fresh ginger, finely minced
1/2 tsp. ground cinnamon
 
For the topping:
3/4 c. all-purpose flour
3/4 c. sugar
3/4 c. light brown sugar
1/2 tsp. ground cinnamon
pinch of salt
pinch of cayenne pepper
6 Tbsp. unsalted butter, cut into small pieces

Directions

​Preheat the oven to 350°F/180°C.

Butter a cast iron 9 x 13-in. baker.
 
In a large mixing bowl, combine the filling ingredients and gently toss to coat all of the apple pieces.
 
Spread the apple filling into an even layer in the prepared pan.
 
In another mixing bowl, combine all topping ingredients and work the butter into the dry ingredients with your fingertips to make a crumbly mixture the size of small peas.
 
Cover the apples with the topping and bake 40 - 50 minutes.
 
Cool 15 minutes and serve warm with ice cream.
