Tonia Wilson — Sommelier
Tonia's interest in food and wine began while finishing her university degree in the Loire region of France. With an abundance of wonderful food and wine products at her fingers she started to study the history of French cuisine and its classical recipes. On returning to Ottawa she completed the Culinary program at Algonquin College and shortly after began working in various restaurants in the nation's capitol.
Tonia has spent much of her culinary career in Europe holding positions as Head Chef at the Canadian Embassies in both Italy and Belgium. While mastering the local cuisines Tonia also honed her wine skills by studying and traveling through Europe's most prestigious vineyards. Her love of wine lead to her certification as a Sommelier with the Italian Sommelier Guild (AIS) in Rome, Italy. Tonia now focuses on teaching about food and its intricate relationship with wine through her company Savour.
